Nowadays fusion cuisine more and more appears in the restaurants. It represents one of the modern culinary trends. The term “Fusion” states for itself. Thus fusion is a compilation of different world cuisines using different cooking techniques. Fusion cuisine is an art combined flavours of oriental and western culinary traditions. Fusion is a combination of ingredients that can’t be combined at the first view, that’s why fusion is always new and surprising.

When did the trend appear in the culinary? The question is raised by many people but we can hardly get the answer ever because the human race will never know who was the first to salt meat for instance. Man is such an inquisitive being that to touch and smell something new is so tempting. Fusion cuisine combines both traditions and innovations.

It seams so easy to cook fusion food when the rules don’t exist for the first sight but it’s not because of ingredients compatibility and taste harmony first of all.

There are few thoughts on fusion cuisine time and place of origin. One of the legends calls Hawaii islands the motherland of fusion cuisine knowing that in the nineteenth century two such a different and actually incompatible cultures as American and Japanese got bound. Others think fusion cuisine appeared in New-York where decades or even hundreds of different cultures are neighboring. Anyway all the researchers come to the same page about the main principle of fusion – mixing things, sometimes unexpected mix but not accidental borrowing from other culinary traditions.

Chefs following the trend are proud of ability to unlimit your art of any frames; fusion cuisine in any restaurant means some peculiarities special to the Chef first of all. A lot depends on the Chef’s skills and knowledge of world cuisines. This is where the theory must be followed by practice.

To be able to cook good fusion food the Chef shall know all trends of culinary art. Anther very important feature is to understand compatibility of the ingredients, to sense the taste mach mostly intuitively. So fusion may be named as a separate trend in the “culinary philosophy”. At the same time all the products taken for fusion culinary shall match in taste and in structure and ingredients shall be selected so that they can’t “conflict” to each other. When you get to such compatibility you can then get a real art of culinary. At the same time you shouldn’t forget that a good dish can only happen of fresh and good quality ingredients. Fusion is a motion, the motion to everything new and non-existing yet.
