Although the  most of world gastronomes call French cuisine as the top one you shouldn’t forget that bases of modern culinary art established by Italian chefs. Italia was always considered the outpost of the most demanding gastronomes even back to the Rome Impair period when anybody who visited Italy nowadays and dined out at a respectable restaurant can confirm Italian cuisine is still outstanding. It also worth saying Italian cuisine is a collective concept where every province has own culinary traditions that makes it’s cuisine even more original.

Although culinary of each Italian province differs you can still outline some common features easily. For instance, all the citizens of the sunny country fall for fish and sea food. Special starters called anti-pasta usually contain special appetizer. And no doubt the center of Italian cuisine is taken by the pasta.

Besides cooking is impossible without fresh fruits, vegetables and greens. Looking at all the variety and exotics the culinary is still simple and it doesn’t hide the natural taste of the ingredients. Amazing assortment of pastas that you can never find in any of cuisine of the world doesn’t mean they have pasta as the only side food. By the way pasta considered as the main course in our country is served between the courses in Italian lands. For this reason either potatoes or rice goes as the side dish as a rule. And that’s why Italy is the biggest rice growing state in Europe.

No doubt olive oil plays primary role in traditional culinary at the same time Italians don’t set taste of butter aside especially in Lombardy where nearly everything is cooked with butter. Emilia-Romagna well known for swine breeding national food is cooked with pork fat as a rule.

Gastronomes of the world can’t imagine Italian cuisine without parmesan. It’s true, you can see it served everywhere because grated cheese is topped to the pastas but soups also. Another popular stock farming product of Italy is veal and a well known fact is that most of veal among European countries is consumed in Italy.

Italian cuisine was influenced by other European cuisine especially at the Northern part of the country. Southern Tyrol and part of Venice are the areas of strong Austrian cuisine influence since the territory was owned by the country for quite a long period. Balkan cuisine also impacted on the border regions you can see it in the sweeties.

Italian cuisine is very diversified by presence of different products and ingredients and it’s not limited by pasta only; Italian culinary tradition is much broader and wider and you can taste it’s flavor in COCON HOME restaurant.
